The story
A Jashore saying, roughly "Jashore's pride is its date sap", sums up how closely the district is tied to the khejur tree. When the nights turn cold in late Kartik, gachhis shave the top of each wild date palm, cut a fresh channel in the trunk in the afternoon and hang a clay pot beneath it. The sap drips overnight and is collected before sunrise, then boiled in wide, shallow pans over a fire of dry leaves and fronds until it thickens. The sweetest, most fragrant sap usually comes after the tree has been rested for a few days, and the first gur of the season is prized as nolen gur. Jashore's sandy loam is said to help the trees root deeply, and the district's big markets at Rupdia, Bagharpara, Keshabpur and Rajganj trade gur throughout the season.
Jashore is the best-known name, but the date-palm gur belt runs across the south-west and beyond: Jhenaidah, Chuadanga and Narail nearby, Faridpur, Madaripur and Gopalganj across the Padma, and pockets further north such as Joypurhat. Each area makes three broad forms. Jhola or nolen gur is a pourable, glossy syrup eaten with pitha and payesh. Patali is the same syrup cooked longer, beaten and set in moulds into round or square cakes. Dana gur is grainy and soft. Manikganj makes its own small-batch hajari gur, which has a separate guide. In 2024 the Department of Patents, Designs and Trademarks registered Jashore's khejur gur as a Geographical Indication; the tag covers Jashore only, not the whole belt.
The trade has a serious health side. Fruit bats feed at the sap pots at night, and since the early 2000s Bangladesh has recorded repeated Nipah virus outbreaks, most of them linked to drinking raw or fermented date sap. The Institute of Epidemiology, Disease Control and Research warns every winter: never drink raw khejur rosh. Gur itself is boiled for hours, so it does not carry this risk.
How to spot the real Jashore khejur gur
Real gur needs a great deal of sap and fuel, so very cheap gur is the first warning sign. Pure patali is usually reddish-brown to dark brown, a little uneven in colour, soft enough to cut or break by hand, and it melts on the tongue with a smoky, caramel aroma of date sap. Gur that is pale gold, rock-hard, shows sugar crystals when broken, or tastes plainly sweet with little fragrance has often been padded with cane sugar; officials in the region have also found gur lightened with chemicals or coloured with dye. Jhola gur should smell of date sap and be glossy, not flat and syrupy like sugar water. Season matters too: fresh gur is made from about November to February, so new-season gur offered in summer is suspect. No home test proves purity, so rely on season, smell, texture and a seller you can question.
Buying tips
Ask the seller who made the gur, in which upazila, on what date, and whether any sugar was added. Honest makers will often say outright that a cheaper grade contains sugar. Ask whether it is jhola, patali or dana, how it will be packed (jhola gur needs a sealed food-grade jar; patali needs a box that keeps it from sweating), and how long delivery will take. Buy a small amount first and taste it.
Every shop on Midmart sets its own delivery charge, so gur from one Jashore seller and rice from another will arrive as two parcels with two charges. Midmart does not collect payment or deliver: you agree payment and courier directly with the seller. No Midmart listing is proof of purity or of GI origin, so ask the questions above before you confirm.
Keeping it fresh
Keep patali in an airtight container in a cool, dry place; it softens and sweats in humid weather and stays good for several weeks. Jhola gur ferments more easily, so keep it in a clean glass jar in the fridge, always use a dry spoon, and finish it within a few weeks. Stored longer, both can be frozen in small portions.
